Creamy Cottage Cheese Pasta2

The best part? You’d never guess this delicious meat sauce is made with blended cottage cheese. It creates the most velvety, creamy texture that perfectly coats every bite of pasta.

I first made this Cottage Cheese Pasta Sauce on a whim, using simple, wholesome ingredients—and it quickly became a real success in my house. Made without heavy cream or butter, it’s a lighter, protein-packed alternative to Alfredo sauce that still tastes rich and comforting. After seeing how well it worked, it was only a matter of time before I turned it into something even heartier—this Creamy Cottage Cheese Beef Pasta Sauce, and let me tell you, it’s just as satisfying as it sounds!

If you’re after an easy high-protein ground beef pasta recipe that’s great for meal prep, family dinners, or a casual dish that still impresses, this is it. And don’t skip the extra sprinkle of parmesan on top—it’s the perfect finishing touch.

The Cottage Cheese Pasta I Didn’t Know I Needed (But Now I’m Obsessed)

  • Secretly high in protein – Thanks to the cottage cheese and ground beef, this dish is surprisingly filling and balanced.
  • Comfort food, made lighter – You get all the creamy pasta goodness you love, without the heavy feeling after.
  • No fancy ingredients – Just simple, wholesome staples you probably already have in your kitchen.
  • Weeknight-friendly – Ready in under 30 minutes, with easy steps and no complicated prep.
  • Meal prep approved – Stores and reheats like a dream, so it’s perfect for leftovers or make-ahead lunches.
  • Kid (and adult) approved – Rich, cheesy, and saucy enough to make everyone at the table happy.
  • Smarter than your average creamy pasta – Blended cottage cheese gives béchamel vibes, but with fewer calories and more protein.

Ingredients Needed

This is one of my favorite recipes since it needs only a few easy-to-find ingredients. Here is a list of everything you will need:

Creamy Cottage Cheese Pasta Ingredients
  • Pasta – Short shapes like penne, rigatoni, or fusilli are perfect—they hold onto the sauce like champs. Want to keep it low carb? Swap with options like:
    • Palmini (hearts of palm pasta) – Mild, tender, and a great low-carb substitute.
    • Zucchini noodles (zoodles) – Light and fresh, great for a lower-calorie meal.
    • Shirataki noodles – Super low in carbs, with a neutral flavor that soaks up sauce.
    • Low-carb chickpea or lentil pasta – Higher in fiber and protein, with a firmer bite.
  • Cottage Cheese – Full-fat for the creamiest texture; blend until smooth to mimic a béchamel-like consistency.
  • Parmesan Cheese – Adds sharp, nutty, umami flavor and helps thicken and enrich the sauce. Freshly grated Parmigiano-Reggiano has the best flavor and melts more smoothly.
  • Olive Oil – Extra virgin olive oil for flavor, though regular olive oil works fine too.
  • Onion – Yellow onions are ideal for a mild, balanced flavor.
  • Garlic Cloves – Fresh cloves—not pre-minced or jarred—for bold, clean flavor.
  • Ground Beef – 85% lean strikes the perfect balance. It’s juicy but not greasy. If you go leaner, the meat might dry out. Too fatty? Just drain off the excess.
  • Marinara Sauce – Look for no-sugar-added marinara with minimal ingredients (tomatoes, olive oil, garlic, herbs).
  • Cottage Cheese – Full-fat for the creamiest texture; blend until smooth to mimic a béchamel-like consistency.
  • Cornstarch – Don’t skip it! Just 2 teaspoons makes a big difference. It thickens the blended cottage cheese so it turns into a smooth, creamy sauce that clings to the pasta beautifully. Without it, the sauce can turn watery and separate—aka a messy mess. Trust me, this tiny step is totally worth it.
  • Salt & Pepper – Season to taste, always. They bring the whole dish together and highlight all those savory flavors.
  • Oregano – Adds a classic Italian herb note that complements the marinara and beef.

How To Make This Creamy Cottage Cheese Beef Pasta Sauce

Once you see how easy it is to prepare this high-protein beef pasta sauce, you will want to make it over and over again for a quick and delicious dinner. Here are the instructions that you have to follow:

Cook the Pasta

Bring a large pot of salted water to a boil—salt generously, like the sea, to flavor the pasta.

Add 8 oz of your chosen dry pasta and cook according to the package instructions until al dente (firm to the bite).

Before draining, reserve about ½ cup of the pasta water in case you need to thin the sauce later.

Drain and set the pasta aside.

Tip: Stir occasionally while cooking to prevent sticking, especially with gluten-free pasta.

Sauté the Aromatics

In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Add the chopped yellow onion and cook for 3–4 minutes until it becomes soft and translucent.

Next, stir in the minced garlic and sauté for another 30 seconds, just until it becomes fragrant—don’t let it brown.

Tip: Lower the heat slightly if the garlic starts to color too quickly.

Cook the Ground Beef

Add 1 lb of ground beef directly into the skillet with the onion and garlic.

Use a wooden spoon or spatula to break up the meat as it cooks.

Cook for about 6–8 minutes, or until the beef is fully browned and no pink remains.

If needed, drain off any excess fat from the skillet to avoid a greasy sauce.

Tip: For extra flavor, let the beef sit undisturbed for a minute or two before stirring—it develops a nice sear.

Make the Creamy Cottage Cheese Sauce

In a blender or food processor, combine 1 cup of cottage cheese, 2 teaspoons of cornstarch, 24 oz jar of marinara sauce, 1 teaspoon salt, ¼ teaspoon black pepper and 1 teaspoon oregano.

Blend until the mixture is completely smooth and velvety.

Once smooth, stir in ¼ cup of parmesan cheese.

Tip: This creates a rich, velvety sauce with no need for heavy cream.

Combine the Sauce with the Beef

Pour the creamy cottage cheese marinara sauce over the cooked beef and aromatics in the skillet.
Stir to combine, then let it simmer over medium-low heat for 3–5 minutes until slightly thickened and heated through.
Tip: Add a splash of reserved pasta water if the sauce becomes too thick.

Toss with Pasta

Add the cooked pasta to the skillet and toss gently until evenly coated in the creamy meat sauce.
Tip: Use tongs or a large spoon to fold in the pasta carefully, especially if using short shapes like penne or rigatoni.

Serve and Enjoy

Serve hot, topped with extra grated parmesan cheese and a sprinkle of chopped fresh parsley, if desired.

Optional: Pair with a side salad or some garlic bread to complete the meal.

Tips For Making The Best Cottage Cheese Beef Pasta Recipe

  • Use Full-Fat Cottage Cheese – Full-fat cottage cheese blends smoother and gives the sauce a richer, creamier texture without needing heavy cream.
  • Blend the Cottage Cheese Thoroughly – For the best sauce consistency, blend the cottage cheese and cornstarch until completely smooth—no lumps! A high-speed blender or food processor works best.
  • Season the Sauce Layers – Season the ground beef and the marinara sauce to build depth of flavor. Don’t skip the salt, pepper, and oregano.
  • Brown the Beef Well – Let the beef sear and develop a little color before stirring too much. This adds great flavor to the finished dish.
  • Choose a Good Marinara Sauce – Use a quality marinara with clean ingredients and no added sugar if you want to keep it healthier and more flavorful.
  • Don’t Forget the Pasta Water – Reserve some starchy pasta water to help loosen the sauce and make it cling better to the noodles if it thickens too much.
  • Use Pasta That Holds Sauce – Short shapes like penne, rigatoni, or fusilli work great because they trap the creamy meat sauce in every bite.
  • Let It Simmer Together – After adding the cottage cheese sauce, let everything simmer for a couple of minutes to meld the flavors and thicken slightly.

How To Store This High Protein Pasta Sauce

  • Let It Cool First – Before transferring your sauce—or the full pasta dish—make sure it cools to room temperature. This prevents steam from building up in your container, which can make the sauce watery or separate.
  • Use Airtight Containers – Place the cooled sauce into airtight containers (glass or BPA-free plastic). If you’re planning to store the cottage cheese sauce separately from the pasta, that’s even better for preserving texture and flavor.

Store in the Fridge (3–4 Days)

Store in the fridge for up to 4 days. Note: the sauce may thicken slightly in the fridge. To bring it back to a smooth, creamy texture, add a splash of water, milk, or broth when reheating.

Freeze for Longer Storage (1–2 Months)

This healthy cottage cheese pasta sauce freezes beautifully! Pour into freezer-safe containers or resealable bags, flatten them to save space, and freeze for up to 2 months. Thaw overnight in the fridge before using.

Reheat Gently

To reheat, warm the sauce in a skillet over low heat, stirring frequently. If reheating a full pasta dish, add a bit of liquid to keep the sauce smooth and avoid drying out. A splash of water, milk, or broth works great here.

Serving Ideas for Creamy Cottage Cheese Pasta

  • Sprinkle With Fresh Herbs – Top with chopped parsley, basil, or oregano for a pop of color and fresh flavor.
  • Add Extra Cheese – You know what makes cheesy pasta even better? More cheese. Try a handful of shredded mozzarella or freshly grated Parmesan right before serving.
  • Pair With a Simple Side Salad – A simple green salad with vinaigrette is the perfect contrast—fresh, crunchy, and exactly what this cozy pasta wants on the side.
  • Garlic Bread on the Side – Toasted garlic bread (or even low-carb breadsticks) is ideal for scooping up every last bit of that creamy, beefy sauce.
  • Use It as Meal Prep – Portion leftovers into containers and refrigerate for easy, high-protein lunches. It reheats beautifully—just add a splash of water or sauce to revive it.
  • Bake It Into a Casserole – Pop leftovers into a baking dish, top with cheese, and bake at 375°F for 10–15 minutes until golden and bubbly. Instant pasta bake!
  • Add Extra Veggies – Stir in spinach, peas, zucchini, or sautéed mushrooms to boost flavor and nutrients—great way to sneak in some greens.
  • Make It Kid-Friendly – Serve in smaller portions with some grated cheese on top—most kids love the creamy, cheesy flavor.
