INGREDIENTS

1. – Add the olive oil to a large pot over medium heat. Add the chopped onion and minced garlic and sauté until tender.

2. Cut the chicken thighs into bites size pieces, and add them over the onion and garlic.

3&4. Cook for about 10 minutes. Add the sun-dried tomatoes and quartered artichoke hearts, and cook for another 5 minutes.

5. – Pour the chicken broth and simmer for 10 minutes.

6. Add the artichoke heart and stir in the heavy cream.

7&8. Add the spinach leaves, then cook for 5 more minutes on low.
