Cottage Cheese Snickers Bars

These Cottage Cheese Snickers Bars have a soft peanut butter center, a layer of crunchy roasted peanuts, and a firm chocolate topping. Each large bar has approximately 15 grams of protein, depending on the cottage cheese, peanut butter, protein powder, and chocolate you use.

I already have a few protein bar recipes I really love, including my Lemon Cottage Cheese Protein Bars and Peanut Butter Greek Yogurt Protein Bars, but I wanted these to feel a little more like a candy bar.

The cottage cheese might sound a little unexpected, but once it’s blended, you won’t even know it’s there. It gives the filling a creamy texture while adding extra protein, without making the bars feel heavy or dry.

They’re especially good straight from the fridge, when the chocolate is firm and the center is still soft. I like making a batch at the beginning of the week so I have something ready whenever I want a quick snack or a little dessert with my coffee.

Ingredients You’ll Need

For the Peanut Butter Layer

Cottage Cheese – This creates a creamy base and adds protein. Full-fat cottage cheese gives the richest texture, but low-fat cottage cheese can also be used.

Almond Flour – Almond flour gives the bars structure while keeping the filling soft and slightly chewy. For the smoothest texture, use finely ground blanched almond flour rather than coarse almond meal.

Coconut Flour – Coconut flour absorbs excess moisture and helps the peanut butter layer hold its shape. You only need a small amount because it is much more absorbent than almond flour. I don’t recommend replacing it with the same amount of almond flour.

Vanilla Protein Powder – Protein powder adds sweetness, structure, and most of the extra protein. Whey protein usually creates the softest texture, while plant-based protein powder may absorb more moisture and make the mixture thicker or drier.

Creamy Peanut Butter – This gives the bars their rich peanut flavor and helps bind the filling. Use a smooth variety that is easy to stir.

Sugar-Free Maple Syrup – Maple syrup sweetens the filling and helps bring the ingredients together. Regular maple syrup also works if you are not making the bars sugar-free.

Vanilla Extract – Vanilla enhances the peanut butter and chocolate flavors and makes the filling taste more like dessert.

Salt – Salt balances the sweetness and brings out the peanut butter and chocolate flavors.

Roasted Peanuts – Chopped roasted peanuts create the crunchy layer between the peanut butter filling and the chocolate topping. Chop them fairly finely so the bars are easier to slice and the chocolate topping sits evenly.

For the Chocolate Topping

Sugar-Free Chocolate Chips – Melted chocolate creates the thick, firm topping that makes these bars feel like a real candy bar. You can use milk, semisweet, or dark chocolate chips depending on how sweet you want them.

Coconut Oil – Coconut oil helps the chocolate melt smoothly and makes it easier to spread over the peanuts. It also creates a topping that firms up nicely once chilled.

Chopped Roasted Peanuts – A few extra peanuts can be sprinkled over the chocolate for additional crunch and a more finished look.

Flaky Salt – Flaky salt is optional, but I love the way it balances the sweet chocolate and rich peanut butter. You only need a small pinch.

How to Make High-Protein Cottage Cheese Snickers Bars

These bars are very easy to make, but the final texture depends on blending the cottage cheese completely smooth and giving the layers enough time to chill before slicing.

Prepare the Pan

Line an 8×4-inch loaf pan with parchment paper, leaving enough paper hanging over the sides to lift the bars out later.

Using a loaf pan creates thick bars with distinct peanut butter, peanut, and chocolate layers. You can use a slightly larger pan, but the bars will be thinner.

Blend the Cottage Cheese

Add the cottage cheese to a food processor or high-speed blender. Blend until completely smooth and creamy, scraping down the sides as needed.

Take your time with this step. Any cottage cheese curds that remain may be noticeable in the finished bars.

Make the Peanut Butter Filling

Add the almond flour, coconut flour, vanilla protein powder, peanut butter, maple syrup, vanilla extract, and salt to the blended cottage cheese.

Make sure the peanut butter is creamy and at room temperature so it combines easily with the other ingredients.

Blend or mix until a thick, soft dough forms. The mixture should be firm enough to hold its shape but still slightly soft and creamy.

Transfer the peanut butter mixture to the prepared loaf pan.

Finely chop the roasted peanuts, then sprinkle them evenly over the chilled peanut butter layer.

My Best Tips

Blend the cottage cheese completely. A high-speed blender or food processor will give you the smoothest, creamiest filling without any visible curds.

Press each layer firmly. Pressing the peanut butter mixture and chopped peanuts down well helps the bars hold together.

Choose a small, deep bowl for melting the chocolate. This helps the chocolate melt more evenly and makes stirring easier.

Score the chocolate before it fully hardens. After approximately 10 minutes in the freezer, lightly mark where you plan to cut the bars. This can help prevent the topping from breaking into uneven pieces later.

Wipe the knife between cuts. A clean blade will give you neater bars and prevent peanut butter filling from smearing over the chocolate.

Easy Variations

Try almond butter – Creamy almond butter can be used instead of peanut butter. The bars won’t taste exactly like Snickers, but they’ll still be delicious.

Add a caramel layer – Spread a thin layer of sugar-free caramel sauce over the peanut butter filling before adding the chopped peanuts.

Make bite-sized pieces – Cut the bars into 12 or 16 small squares for quick protein bites or smaller desserts.

Make them extra salty – Use salted roasted peanuts and finish the chocolate with flaky sea salt for a sweet-and-salty flavor.

Do these bars taste like cottage cheese?

No. Once the cottage cheese is blended with the peanut butter, protein powder, and maple syrup, you really cannot taste it. It simply makes the filling creamy while adding protein and moisture.

Do I have to blend the cottage cheese?

Yes, I highly recommend blending it. This creates a smooth filling without any noticeable cottage cheese curds.

Can I use a different protein powder?

Yes, but the sweetness and texture may change. Whey protein generally creates a softer filling, while plant-based protein powders tend to absorb more liquid and may make the mixture drier.

Add the protein powder gradually if you are using a brand you have not tested before.

Why is my peanut butter layer too soft?

First, allow the mixture to rest for five minutes so the coconut flour and protein powder can absorb moisture. If it is still sticky, add one tablespoon of almond flour at a time until it holds its shape.

The coconut flour will also continue absorbing moisture as the mixture rests.

Why did my chocolate crack when I sliced the bars?

The bars were probably too cold. Let them sit at room temperature for approximately five minutes, then slice them with a sharp knife warmed under hot water.

Mix until a thick, soft mixture forms. If the mixture is too wet, add more almond flour, 1 tablespoon at a time.

  • Finely chop the roasted peanuts, then sprinkle them evenly over the chilled peanut butter layer. Press them down gently.
