Vanilla Protein Powder – Protein powder adds sweetness, structure, and most of the extra protein. Whey protein usually creates the softest texture, while plant-based protein powder may absorb more moisture and make the mixture thicker or drier.
Creamy Peanut Butter – This gives the bars their rich peanut flavor and helps bind the filling. Use a smooth variety that is easy to stir.
Sugar-Free Maple Syrup – Maple syrup sweetens the filling and helps bring the ingredients together. Regular maple syrup also works if you are not making the bars sugar-free.
Vanilla Extract – Vanilla enhances the peanut butter and chocolate flavors and makes the filling taste more like dessert.
Salt – Salt balances the sweetness and brings out the peanut butter and chocolate flavors.

How to Make High-Protein Cottage Cheese Snickers Bars
These bars are very easy to make, but the final texture depends on blending the cottage cheese completely smooth and giving the layers enough time to chill before slicing.
Prepare the Pan
Line an 8×4-inch loaf pan with parchment paper, leaving enough paper hanging over the sides to lift the bars out later.

Using a loaf pan creates thick bars with distinct peanut butter, peanut, and chocolate layers. You can use a slightly larger pan, but the bars will be thinner.
Blend the Cottage Cheese
Add the cottage cheese to a food processor or high-speed blender. Blend until completely smooth and creamy, scraping down the sides as needed.

Take your time with this step. Any cottage cheese curds that remain may be noticeable in the finished bars.
Make the Peanut Butter Filling
Add the almond flour, coconut flour, vanilla protein powder, peanut butter, maple syrup, vanilla extract, and salt to the blended cottage cheese.

Make sure the peanut butter is creamy and at room temperature so it combines easily with the other ingredients.
Blend or mix until a thick, soft dough forms. The mixture should be firm enough to hold its shape but still slightly soft and creamy.

If it feels too wet or sticky, add more almond flour one tablespoon at a time. Protein powders absorb moisture differently, so you may need a little more or less depending on the brand you use.
If the mixture seems unusually dry, add a small spoonful of peanut butter or maple syrup until it comes together.

Press and Chill the Peanut Butter Layer
Transfer the peanut butter mixture to the prepared loaf pan.

Press it firmly into an even layer using a spatula or the back of a spoon. You can place a small piece of parchment paper over the mixture and press down with your hands to create a smoother surface.
Refrigerate the pan for a few minutes while you chop the peanuts and prepare the chocolate.
Add the Peanut Layer
Finely chop the roasted peanuts, then sprinkle them evenly over the chilled peanut butter layer.

Press the peanuts down gently so they stick to the filling. This helps prevent them from moving when you pour the melted chocolate on top.

Make the Chocolate Topping
Add the chocolate chips and coconut oil to a microwave-safe bowl.
Microwave in 20-second intervals, stirring well after each one, until the chocolate is completely melted and smooth.

Avoid overheating the chocolate, especially when using sugar-free chocolate chips. They can become thick or grainy if heated for too long.
You can also melt the chocolate and coconut oil in a heatproof bowl set over a small saucepan of gently simmering water.
Assemble and Chill
Pour the melted chocolate over the chopped peanuts and spread it into an even layer.

Sprinkle the top with additional chopped peanuts and a small amount of flaky salt, if desired.
Place the pan in the freezer for 15 to 20 minutes, or until the chocolate is completely set and the peanut butter layer is firm enough to slice.

Lift the slab out of the pan using the parchment paper. Let it sit at room temperature for about five minutes before slicing.
Cut it into eight bars using a large, sharp knife. For cleaner cuts, warm the knife under hot water, dry it completely, and slice through the chocolate carefully.

These bars are best served chilled. The chocolate will soften if they are left at room temperature for too long.
My Best Tips
Blend the cottage cheese completely. A high-speed blender or food processor will give you the smoothest, creamiest filling without any visible curds.
Press each layer firmly. Pressing the peanut butter mixture and chopped peanuts down well helps the bars hold together.
Choose a small, deep bowl for melting the chocolate. This helps the chocolate melt more evenly and makes stirring easier.
Score the chocolate before it fully hardens. After approximately 10 minutes in the freezer, lightly mark where you plan to cut the bars. This can help prevent the topping from breaking into uneven pieces later.
Wipe the knife between cuts. A clean blade will give you neater bars and prevent peanut butter filling from smearing over the chocolate.

Easy Variations
Try almond butter – Creamy almond butter can be used instead of peanut butter. The bars won’t taste exactly like Snickers, but they’ll still be delicious.
Add a caramel layer – Spread a thin layer of sugar-free caramel sauce over the peanut butter filling before adding the chopped peanuts.
Make bite-sized pieces – Cut the bars into 12 or 16 small squares for quick protein bites or smaller desserts.

No. Once the cottage cheese is blended with the peanut butter, protein powder, and maple syrup, you really cannot taste it. It simply makes the filling creamy while adding protein and moisture.
Do I have to blend the cottage cheese?
Yes, I highly recommend blending it. This creates a smooth filling without any noticeable cottage cheese curds.
Can I use a different protein powder?
Yes, but the sweetness and texture may change. Whey protein generally creates a softer filling, while plant-based protein powders tend to absorb more liquid and may make the mixture drier.
Add the protein powder gradually if you are using a brand you have not tested before.
Why is my peanut butter layer too soft?
First, allow the mixture to rest for five minutes so the coconut flour and protein powder can absorb moisture. If it is still sticky, add one tablespoon of almond flour at a time until it holds its shape.
The coconut flour will also continue absorbing moisture as the mixture rests.
Why did my chocolate crack when I sliced the bars?
The bars were probably too cold. Let them sit at room temperature for approximately five minutes, then slice them with a sharp knife warmed under hot water.
