Ingredients For Keto Mexican Bowl

These ingredients are easy to find and make a one serving Mexican bowl. 

You can simply double, triple, or quadruple the ingredients if you want to make more. It’s really adaptable.

  • Eggs – I used two large eggs that I love to cook in the beef grease that remains after cooking. I prefer them scrambled, but you can prepare the eggs however you like – over easy, sunny side up, or poached!
  • Avocado – Half an avocado adds a creamy texture and lots of healthy fat to this delicious bowl.
  • Sour Cream – Let not skip this amazing ingredient! It’s so delicious.
  • Cheddar Cheese – this is my favorite cheese, but you can use any kind you want.
  • Tomato – A sprinkle of diced tomatoes adds a lot of nutrition and a burst of color and flavor to your taco bowl. For some extra spice, you can use my favorite Pico de Gallo sauce instead!
  • Cilantro is optional, but one tablespoon of fresh cilantro gives this Mexican bowl a fresh and intense flavor.
  • Ground beef meat – you could use any meat: chorizo, ground turkey, chicken, or plant-based protein you want! I used ground beef that I can season with my favorite homemade Taco Seasoning.

How To Make The Best Keto Mexican Bowl

To make this delicious Keto Mexican Bowl, you have to follow some easy steps.

  1. Start by cooking the meat over medium-high heat in a skillet. Season to taste! Remove some of the fat.
  2. While the meat is cooking, prepare the veggies. Slice the avocado and tomatoes in your favorite way.
  3. Cook the eggs in your favorite way. I like them scrambled.
  4. Add the beef in a bowl, along with veggies and the cheddar cheese.
  5. Top with cilantro, if using. Add some hot sauce if you want, and enjoy your Keto Mexican Bowl!

Tips For Making The Best Mexican Bowl

  1. Cook the eggs in the grease that remains from cooking the beef. Adds so much flavor.
  2. Cook the eggs gently under low heat to make them super fluffy. Begin stirring when the eggs are half cooked.

  • 2 large eggs
  • 4 oz ground beef
  • 1 tsp taco seasoning
  • 1/2 ripe avocado sliced
  • 2 tbsp sour cream
  • 1/4 cup Cheddar Cheese shredded
  • 1/4 small tomato diced
  • 1 tbsp fresh cilantro leaves chopped


  • Cook ground beef over medium heat in a skillet. Add taco seasoning and cook completely.
  • Remove the meat from the skillet and cook the scrambled eggs. Season with salt and pepper to taste.
  • Transfer the cooked eggs to the bottom of your bowl.
  • Top with cooked beef, avocado slices, cheddar cheese, tomato, sour cream, and sprinkle fresh cilantro. Enjoy warm.
