Ingredients
  

  • 4 cups kielbasa sausage cut into 1/2-inch rounds
  • 1 cup sweet potato or pumokin diced into 1/2” cubes
  • 1 red onion chopped
  • 2 cups fresh broccoli florets
  • 1 cup red bell pepper chopped
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp smoked paprika
  • ½ tsp salt and black pepper

Instructions
 

  • Preheat the oven to 400F/200C and line a large sheet with parchment paper.
  • Spread the kielbasa and vegetables onto the prepared baking sheet. Drizzle with olive oil, season with Italian seasoning, smoked paprika, minced garlic, salt, and pepper. Toss to coat.
  • Bake for 30-35 minutes until the vegetables are fork tender.
