I make fish often because it cooks quickly and doesn’t need a complicated sauce to taste good. My pan-seared halibut is perfect when I want something simple, my fish tacos are always a fun family dinner, and this butter lemon tilapia is one of my favorite weeknight recipes.

These parchment fish boats are just as easy, but the fish and vegetables cook together in individual portions. I love serving them directly in the parchment because every boat holds onto the lemony cooking juices, and there is very little cleanup afterward.

How to Make Mediterranean Baked Fish in Parchment

These parchment fish boats are simple to assemble, and each one becomes an individual serving filled with tender fish, colorful vegetables, and plenty of bright Mediterranean flavor.

Shape the Parchment Boats

Preheat the oven to 400°F or 200°C.

Cut three large sheets of parchment paper. Fold each sheet into an accordion pattern, then tie both ends with kitchen twine. If you don’t have kitchen twine, simply twist the ends tightly instead.

Add the Vegetables

Divide the zucchini, red onion, cherry tomatoes, and sliced bell pepper evenly among the three parchment boats.

Drizzle the vegetables with 1 tablespoon of olive oil and season lightly with salt and black pepper.

Add the Lemon and Herbs

Cut half of the lemon into thin slices and place one or two slices over each fillet. Squeeze the juice from the remaining half over the fish.

Bake for 15 to 20 minutes, depending on the thickness of the fillets. The fish is ready when it flakes easily with a fork and reaches an internal temperature of 145°F or 63°C.

Tips for Moist and Flaky Baked Fish

Choose fillets with a similar thickness. This helps all portions cook evenly and prevents one piece from drying out while another is still undercooked.

Pat the fish dry first. Removing excess moisture helps the olive oil and seasonings stick to the fillets.

Don’t overcrowd the parchment boats. Leave enough room around the fish so the hot air can circulate and the vegetables cook evenly.

Use wide sheets of parchment. The sides need to be high enough to hold the vegetables and juices without spilling onto the baking sheet.

Check thinner fillets early. Delicate fillets may be ready after 12 to 15 minutes, so begin checking before the full cooking time has passed.

You can easily change these Mediterranean fish boats depending on what you have in the refrigerator. Try adding sliced olives, baby spinach, artichoke hearts, asparagus, or thinly sliced yellow squash.

For a little heat, sprinkle the fish with red pepper flakes before baking. A small pat of butter placed over each fillet also adds richness, while olives give the boats a saltier, brinier flavor.

Fridge: Transfer the fish and vegetables from the parchment into an airtight container. Refrigerate for up to 2 days.

Reheating: Reheat leftovers gently until the center reaches 165°F (74°C). Avoid heating them longer than necessary because white fish dries out quickly.

You can also reheat individual portions in the microwave using short intervals. Avoid overheating, as white fish can become dry quickly.

Freezer: I don’t recommend freezing the assembled dish because the cooked zucchini and tomatoes may become watery after thawing.
