Preheat the Oven and Prepare the Muffin Tin

Preheat the oven to 375°F or 190°C. Grease all 12 cups of a standard muffin pan thoroughly.

A greased metal pan creates the best browned edges. Silicone muffin liners also work well. Paper liners may stick to the egg and cheese mixture.

Whisk 8 eggs with the heavy cream until smooth and evenly combined.

Carnivore and Keto Variations

Bacon and Cheddar

Sausage and Pepperoni

Use cooked ground sausage instead of chicken and add a few extra pieces of chopped pepperoni. Check the labels if you follow a strict carnivore diet.

Beef and Mozzarella

Use cooked ground beef and mozzarella for a simple meat-based version. Drain the beef well before adding it.

Jalapeño Cheddar

For a keto version, replace the mozzarella with cheddar and add finely diced jalapeño. This variation is not strict carnivore.
