Are Pecan Cookies Keto-Friendly?

Traditional pecan cookies are not keto-friendly or low-carb because they are loaded with wheat flour and sugar.

But if you still want to enjoy them, you can make this recipe for keto pecans cookies with naturally low-carb ingredients that taste even better than regular ones.

Ingredients You’ll Need

One of the best parts about this gluten-free pecan cookies recipe is that it needs only a few easy-to-find naturally low-carb ingredients. Here is everything you will need:

Ingredients Keto Pecan Cookies
  • Butter – you will need room-temperature unsalted butter to mix easily.
  • Sweetener – I used powdered erythritol for this recipe, but you can also use monk fruit or allulose.
  • Almond & Coconut Flour – the best low-carb flour substitutes for keto-baked sweets.
  • Xanthan Gum – is used to bind everything together.
  • Vanilla Extract – adds a boost of flavors.
  • Pecans – you will need finely chopped pecans to combine well in the batter.
  • Cinnamon – adds a great flavor and smell while baking.
  • Baking Powder – helps the cookies rinse.
  • Salt – is used to enhance all the flavors.

These sugar-free cookies are my favorite cookie recipes since it’s super easy to make. Here is everything you have to do:

  1. Start by mixing the butter with the sweetener until creamy.
  2. Chopp the pecans finely, then add them to the butter with the rest of the ingredients.
  3. Mix using your hands or a silicone spatula until well combined.
  4. Using a cookie scoop, start forming the cookies, then arrange them on a baking dish lined with parchment paper.
  5. Bake your cookies in the preheated oven for 20 minutes.
  6. Remove the cookies from the oven and let them cool on a cooling rack.
  7. Enjoy!!

Recipe Variations

  • You can add some chocolate chips to the batter.
  • Add a pecan to the top of each cookie before baking it.
  • You can sprinkle the cookies with some sea salt for a salty flavor.

Tips For Making The Best Keto Pecan Cookies

  • Leave space between each cookie on the baking sheet because they will spread slightly during baking.
  • Sprinkle over the cooled cookies with some powdered sweetener.
  • Add one extra tablespoon of coconut flour if the dough seems too wet.
  • To ensure even baking, shape your cookies into uniform sizes. For this step, you can use a medium cookie scoop.
  • Don’t overbake your cookies because they will become dry. So after 20 minutes of baking, remove them from the oven even if they are a little soft because they will harden while cooling.
