How To Make Chocolate Pecan Keto Fudge?

  1. Prepare the Pecans: Using a sharp knife or food processor, carefully chop the pecans into small pieces. For a finer texture, pulse in a food processor until you reach the desired size.
  2. Mix the Base: In a large mixing bowl, bring unsalted butter, coconut oil, and cream cheese to room temperature to ensure they’re soft enough to blend smoothly. Using a hand mixer on medium speed, combine these ingredients until you achieve a creamy mixture.
  3. Add Dry Ingredients: To the creamy base, gently fold in the chopped pecans, pure vanilla extract, unsweetened cocoa powder, and your choice of low carb sweetener. Use a spatula to mix, ensuring all ingredients are well incorporated.
  4. Prepare for Chilling: Line an 8×8 inch baking tray with parchment paper, allowing the paper to overhang the edges slightly for easier removal. Carefully spread the fudge mixture into the tray, smoothing the top with the spatula to ensure an even layer.
  5. Chill the Fudge: Place the tray in the refrigerator and let the fudge set until firm. This usually takes at least 2 hours, but you can leave it overnight for best results.

  • Add the pecans, the vanilla extract, the cocoa powder, the sweetener and mix with a spatula until well combined.

  • Refrigerate for at least 2 hours or until set.
  • Using a knife, cut the keto fudge into little squares.

  1. Really did get a bit peeved when weighing the cream cheese, I used a cup..(.American cup.)..then watched the video and you just used half a carton…why not just say that…anyhow it's in the fridge…Happy Easter….x
