I love this kind of bowl because it works for breakfast, lunch, or even a quick dinner. The beef is seasoned with taco seasoning, the eggs cook right in the same skillet, and everything gets layered with creamy, fresh, and cheesy toppings.

It’s also easy to customize. You can add guacamole, pico de gallo, sautéed peppers, hot sauce, jalapeños, or even crushed keto tortilla chips on top for crunch.

Make one bowl for yourself or double the ingredients if you’re cooking for more people.

Why You’ll Love This Keto Mexican Bowl

  • Quick and easy – Ready in about 15 minutes with simple ingredients.
  • Very filling – The eggs, beef, avocado, cheese, and sour cream make this bowl hearty enough for a full meal.
  • Low-carb taco flavor – You get all the flavor of a taco bowl without rice, beans, or tortillas.
  • Great for one serving – This recipe makes one generous bowl, but it’s easy to double if you’re cooking for more people.
  • Easy to change – Use your favorite toppings, swap the beef for chicken or turkey, or add sautéed vegetables.

Ingredients You’ll Need

Ground Beef – I use 4 ounces of ground beef for one bowl. It makes the recipe hearty and adds a lot of protein. You can also use ground turkey, ground chicken, chorizo, or leftover taco meat.

Taco Seasoning – Taco seasoning gives the beef that classic Mexican-inspired flavor. Use homemade taco seasoning if you want to control the salt and keep it low-carb.

Eggs – Two large eggs make this bowl extra filling. I like scrambling them in the same skillet after cooking the beef because they pick up so much flavor.

Avocado – Avocado adds creaminess and healthy fats. Use half a ripe avocado, sliced or diced.

Sour Cream – Sour cream makes the bowl creamy and balances the spices from the taco-seasoned beef. You can also use Greek yogurt for a lighter option.

Cheddar Cheese – Shredded cheddar melts slightly over the warm beef and eggs. Monterey Jack, pepper jack, or Mexican cheese blend also work.

Tomato – Diced tomato adds freshness and color. You can also use pico de gallo for more flavor.

Cilantro – Fresh cilantro is optional, but it makes the bowl taste brighter. If you don’t like cilantro, use green onions or skip it.

Salt and Pepper – Use as needed for the eggs and beef, especially if your taco seasoning is not very salty.

How To Make a Keto Mexican Breakfast Bowl

Cook the Beef

Heat a skillet over medium heat. Add the ground beef and cook for 5 to 7 minutes, breaking it apart with a spoon, until browned and no longer pink.

Add the taco seasoning and stir well. If the beef releases a lot of grease, drain most of it, but leave about 1 teaspoon in the pan for cooking the eggs.

Cook the Eggs

Remove the beef from the skillet and set it aside.

Reduce the heat to low or medium-low. Add the eggs to the same skillet and scramble gently until just set. Cooking the eggs over lower heat keeps them soft and fluffy.

Season with salt and pepper if needed.

Assemble the Bowl

Add the scrambled eggs to the bottom of a bowl. Top with the taco-seasoned beef, avocado, cheddar cheese, diced tomato, sour cream, and fresh cilantro.

Serve warm with hot sauce, guacamole, pico de gallo, or keto tortilla chips if you like.

Frequently Asked Questions

Is this keto Mexican bowl good for breakfast?

Yes. Since it’s made with eggs, beef, avocado, cheese, and sour cream, it makes a filling savory keto breakfast. It also works for lunch or dinner.

How much protein does it have?

This bowl has about 40g of protein, mostly from the eggs and ground beef.

Can I make it without eggs?

Yes. If you don’t want eggs, skip them and add more beef, chicken, turkey, or even cauliflower rice for a more classic taco bowl.

Can I use chicken or turkey instead of beef?

Yes. Ground turkey, ground chicken, shredded chicken, steak, or chorizo all work well in this recipe.

Can I make this dairy-free?

Yes. Skip the cheddar and sour cream, then add extra avocado, guacamole, salsa, or pico de gallo.

Can I Meal Prep This Keto Mexican Bowl?

Yes, but it’s best to store the ingredients separately.

Cook the taco-seasoned beef ahead of time and keep it in an airtight container in the refrigerator for up to 4 days. You can also scramble the eggs ahead, but they taste best freshly cooked.

Keep the avocado, sour cream, tomato, cheese, and cilantro separate until serving. This keeps the toppings fresh and prevents the bowl from becoming watery.

To serve, reheat the beef, cook or warm the eggs, then add the cold toppings right before eating..
