Prep The Chicken
Start by cutting the chicken breast into small, bite-sized pieces. Aim for pieces about the size of a small coin. Smaller pieces cook more evenly and help keep the fritters juicy and tender, not dry.

If you’re short on time, you can use pre-cooked or rotisserie chicken, but fresh chicken really gives the best flavor and texture.
Chop The Veggies
Finely chop the bell pepper and fresh parsley. The smaller they are, the easier they mix into the batter and the better the fritters hold together while cooking.
