  1. Start by preheating your oven to 400 degrees F.
  2. Add the chicken breast to a bowl and season them with salt, pepper, and garlic powder.
  3. Spread half the barbecue sauce evenly on the bottom of a casserole dish, then add the chicken breasts and brush them with the rest of the sauce.
  4. Bake the chicken breast for about 25 minutes.
  5. Remove the casserole dish from the oven, top the chicken breast with Monterey jack cheese and return the casserole to the oven for 4 minutes or until the cheese melts.
  6. Remove the Monterey chicken from the oven and garnish it with chopped tomatoes, green onion, and crumbled bacon.

  • 4 chicken breasts boneless and skinless
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup barbecue sauce
  • 1 cup Monterey Jack cheese shredded
  • 4 slices bacon cooked and crumbled up
  • 1 medium tomato finely diced
  • 1 green onion

Instructions
 

  • Preheat the oven to 400°F/200°C.
  • Add the chicken breast in a bowl, the chicken breasts, salt, pepper, and garlic powder, and toss to combine.
  • Add half the barbecue sauce on the bottom of a casserole dish and spread evenly, then arrange the chicken breasts in the dish.
  • Brush the remaining sauce over the chicken breasts, transfer the casserole dish to the oven, and bake for 25 minutes.
  • After 25 minutes, remove the casserole from the oven and top the chicken breasts with shredded cheese.
  • Return the casserole to the oven, and place it under the broiler for another 3 minutes.
  • Garnish with crumbled bacon, diced tomatoes, and green onions.
