Ingredients
- 1 cup ripe tomatoes diced
- 1 large zucchini diced into ½-inch cubes
- ½ cup onion diced
- 2 cloves garlic minced
- 1 tsp olive oil
- 1 tsp Italian Seasoning
- ½ tsp salt
- ½ tsp black pepper
- 1/2 cup shredded mozzarella cheese optional
- 1/4 cup parmesan cheese optional
Instructions
- Place a large skillet over medium-high heat and add the olive oil. Sautee the onion for 3-4 minutes or until tender.
- Add minced garlic and chopped zucchini. Cook zucchini for 4-5 minutes until crip tender.
- Add in the chopped tomatoes, Italian seasoning, salt, and pepper. Cook for 2-3 more minutes until the tomatoes begin to burst.
- Sprinkle the mozzarella cheese and parmesan cheese (if used). Cover with a lid and remove from the heat. Serve immediately.
