How to Make a Pumpkin-Shaped Cheese Ball

This pumpkin cheese ball looks impressive, but the actual preparation is very simple.

Start by finely dicing the yellow bell pepper and onion and shredding the cheddar cheese.

Save the bell pepper stem because you’ll use it later as the pumpkin stem.

Make sure both cream cheeses are softened to room temperature before mixing. This makes it much easier to create a smooth, evenly combined filling.

In a large mixing bowl, combine the softened cream cheese, herb cream cheese, 1 cup of shredded cheddar cheese, salsa, parsley, salt, and pepper.

Stir in the finely diced yellow bell pepper and onion until everything is evenly distributed.

TIP: If the cheese mixture feels too soft to shape easily, refrigerate it for about 30 minutes before continuing.

Sprinkle 1/2 cup of the shredded cheddar cheese in the center of the plastic wrap.

Place the cheese mixture over the cheddar, then cover the top and sides with the remaining shredded cheddar cheese.

Bring the edges of the plastic wrap together and wrap the mixture tightly, shaping it into a round ball as you go.

Place 4 sturdy rubber bands or pieces of kitchen twine around the plastic-wrapped cheese ball, spacing them evenly to create pumpkin-like ridges.

Once the cheese ball is firm, carefully remove the rubber bands or kitchen twine and unwrap it.

If you notice any bare spots, gently press a little extra shredded cheddar onto those areas.

Finally, insert the reserved yellow bell pepper stem into the top.

Your pumpkin-shaped cheese ball is ready to serve.

Can I Make a Pumpkin Cheese Ball Ahead of Time?

Yes. In fact, this is a great make-ahead fall appetizer because it needs time in the refrigerator to firm up.

Storing

Fridge: Wrap the cheese ball in cling wrap and store it in the refrigerator. It’s best enjoyed within 4-5 days for optimal freshness.

Freezer: For longer storage, you can also wrap the cheese ball in cling wrap and aluminum foil or place it in a freezer bag and freeze it. Cheese balls can be frozen for up to a month. To serve, thaw in the refrigerator overnight.

  • 8 oz cream cheese softened
  • 7.5 oz herb cream cheese softened
  • 2 tbsp salsa
  • 1 tbsp parsley chopped
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1/2 yellow bell pepper finely diced; keep the stem
  • 1/2 medium onion finely diced
  • 8 oz sharp cheddar cheese fresh grated, divided
  • 4 rubber bands or kitchen twine

Instructions
 

  • Add the softened cream cheese, herb cream cheese, 1 cup shredded cheddar cheese, salsa, parsley, salt, and pepper to a large mixing bowl. Stir until combined.
    Fold in the finely diced yellow bell pepper and onion.

  • Sprinkle 1/2 cup shredded cheddar cheese in the center of the plastic wrap.
    Place the cheese mixture over the cheddar. Sprinkle the remaining shredded cheddar cheese over the top and sides.
