Keto Cranberry Cheesecake Bars

There’s something about cranberry desserts that I always come back to around the holidays, and these Keto Cranberry Cheesecake Bars are one of my favorites. They’re rich and creamy, but the tart cranberry flavor keeps them from tasting too heavy or overly sweet.

Every bite has that soft cheesecake texture with a little crunch, and I love how the cranberry adds just enough sharpness to balance everything out. They also look so festive once they’re sliced, with that beautiful deep red color running through the middle.

They’re the kind of dessert I’d happily put on the table for Thanksgiving or Christmas, especially because they can be made ahead and chilled until you’re ready to serve them. And with just 5g net carbs per bar, they’re a great low-carb option when you still want something that feels like a proper holiday dessert.

Ingredients for Keto Cranberry Cheesecake Bars

These bars have four layers, so I’ve broken the ingredients down by each part of the recipe.

For The Crust

  • Almond flour: Use superfine blanched almond flour for the best texture. Almond meal is coarser and will give you a heavier, more crumbly crust.
  • Egg: Work as a binder for the crust. Use room-temperature eggs to help reduce the eggy taste.
  • Sweetener: Use the low-carb granulated sweetener you normally bake with.
  • Butter: Adds a buttery flavor to the crust and helps it crisp up even more in the oven.
  • Vanilla extract: Adds a little extra flavor to the almond flour base.
  • Salt: Used to enhance all the flavors.

For The Cheesecake Filling

  • Cream cheese: Use full-fat cream cheese and let it come to room temperature before mixing. Softened cream cheese blends much more smoothly and helps prevent small lumps in the filling.
  • Eggs: Use room temperature eggs to reduce the eggy taste and allow all the ingredients to bind while backing.
  • Sweetener: A powdered low-carb sweetener works especially well in cheesecake because it dissolves more smoothly into the filling.
  • Sour cream: Use full-fat sour cream for a smooth, rich cheesecake layer.
  • Vanilla Extract: Choose pure vanilla for the best flavor.

For the Cranberry Layer

  • Cranberries: Fresh or frozen cranberries both work here. There’s no need to thaw frozen cranberries first.
  • Water: Gives the cranberries enough liquid to cook down into a sauce.
  • Lemon juice: Adds brightness and works well with the tart cranberries.
  • Sweetener: Balances the natural tartness of the berries.
  • Orange zest: Cranberry and orange are such a good combination here. The zest adds citrus flavor without thinning the sauce.

For the Pecan Crumble

  • Almond flour: Forms the base of the crumble.
  • Butter: Helps everything come together into small crumbs.
  • Pecans: Add that nutty crunch on top of the soft cheesecake.
  • Sweetener: Just a tablespoon is enough for the crumble.

How to Make Keto Cranberry Cheesecake Bars

There are a few layers to prepare, but none of them are difficult. I like to make the cranberry sauce while the crust is cooling so everything is ready when it’s time to assemble the bars.

Prepare the Pan

Preheat the oven to 350°F (180°C).

Line a 9-inch square baking pan with parchment paper, leaving some overhang on the sides. This makes it much easier to lift the chilled cheesecake out of the pan before slicing.

Make the Almond Flour Crust

Add the almond flour, egg, sweetener, melted butter, vanilla extract, and ¼ teaspoon salt to a mixing bowl.

Mix until everything is evenly combined. The mixture should look crumbly but hold together when pressed.

Transfer it to the prepared pan and press it firmly into an even layer across the bottom.

Bake for 10 minutes, or until the edges are lightly golden.

Remove the pan from the oven and let the crust cool while you prepare the remaining layers.

Make the Cranberry Layer

Add the cranberries, water, lemon juice, sweetener, and orange zest to a medium saucepan.

Bring the mixture to a gentle boil, then reduce the heat and simmer for about 10 to 15 minutes, stirring occasionally.

The cranberries will burst as they cook and the mixture will gradually thicken.

Remove it from the heat once it has a thick, jam-like consistency that can be spread over the cheesecake.

Set aside and let it cool.

Make the Cheesecake Filling

Add the softened cream cheese, sour cream, eggs, sweetener, and vanilla extract to a large bowl.

Mix until smooth and evenly combined.

Try not to beat the filling longer than necessary. Too much air in cheesecake batter can make it puff excessively in the oven and increase the chance of cracks as it cools.

Assemble the Cheesecake Bars

Pour the cheesecake filling over the cooled crust and spread it into an even layer.

Drop spoonfuls of the cooled cranberry sauce over the cheesecake filling, then gently spread it across the surface with a silicone spatula.

Make the Pecan Crumble

Add the butter, pecans, almond flour, and sweetener to a small food processor or blender.

Pulse just until the mixture forms coarse crumbs. Don’t blend it into a paste.

Sprinkle the crumble evenly over the cranberry layer.

Bake and Chill

Bake for about 40 minutes.

The edges should look set, while the center should still have a slight jiggle when you gently move the pan. You don’t want to bake it until the entire center feels firm.

Remove the pan from the oven and let the cheesecake cool completely.

Once cool, transfer it to the refrigerator and chill for a few hours, or until the filling is completely set and firm enough to slice cleanly.

Lift the cheesecake from the pan using the parchment paper, then cut it into 16 bars.

Tips for the Best Cranberry Cheesecake Bars

  • Bring the cream cheese to room temperature. Cold cream cheese is much harder to mix smoothly and can leave little lumps throughout the filling.
  • Cook the cranberry sauce until it is thick. A watery sauce can add too much moisture to the cheesecake layer. It should look more like a loose jam before you remove it from the heat.
  • Let the cranberry sauce cool before assembling. You don’t want to spoon very hot cranberry sauce directly over the cheesecake filling.
  • Look for a slight jiggle in the center. The cheesecake will continue setting as it cools. If you wait for the center to become completely firm in the oven, the bars can end up overbaked.
  • Don’t rush the chilling time. The cheesecake needs several hours in the refrigerator before it will slice neatly.
  • Use a warm knife for cleaner slices. Run a sharp knife under hot water, wipe it dry, and cut through the chilled cheesecake. Clean the knife between cuts for the neatest bars.

How to Store Cranberry Cheesecake Bars

  • Refrigerator

Store the bars in an airtight container in the refrigerator.

You can place parchment paper between layers if you need to stack them so the cranberry topping and crumble don’t stick to the bars above.

Because these contain cream cheese, sour cream, and eggs, keep them refrigerated rather than leaving them at room temperature for extended periods.

  • Freezer

These cheesecake bars can be frozen for up to 2 months.

Once completely chilled, place the bars in a freezer-safe container. If stacking them, separate the layers with parchment paper.

Thaw the bars overnight in the refrigerator before serving.

Topping Ideas

These bars already have plenty going on between the cranberry layer and pecan crumble, so they don’t really need anything else.

If you do want to add something when serving, keep it simple:

  • A small spoonful of whipped cream
  • A few chopped toasted pecans
  • A light drizzle of keto caramel sauce
  • A little extra orange zest

I’d skip heavy toppings that cover up the cranberry flavor since that sweet-tart layer is one of the best parts of these bars.

Can I Use Frozen Cranberries?

Yes. Fresh and frozen cranberries both work for the cranberry layer.

You can add frozen cranberries directly to the saucepan without thawing them first. They may take slightly longer to come to a simmer, but cook them until the sauce reaches the same thick, jam-like consistency.

Can I Make These Cheesecake Bars Ahead?

Yes. In fact, these are a great dessert to make ahead because they need time in the refrigerator before slicing anyway.

Once the cheesecake has cooled completely, refrigerate it until the filling is fully set. You can keep it in the pan while it chills and slice it closer to serving time.
