  • 1 pound large shrimp peeled and deveined
  • 14 ounce smoked sausage sliced into 1/4 inch rounds
  • 1 medium-sized zucchini sliced
  • 1 medium-sized yellow squash sliced
  • 2 red bell pepper chopped into chunks
  • 3 tbsp olive oil
  • 3 tbsp Cajun Seasoning

Instructions
 

  • Preheat the oven to 400F/200C.
  • Wash and slice the vegetables into the same size.
  • In a large mixing bowl, combine shrimp, sausage, zucchini, yellow squash, and bell peppers. Drizzle with olive oil and sprinkle with Cajun seasoning. Toss everything together ensuring the ingredients are well-coated with the seasoning. Season with salt and pepper, if needed.
  • Lay out 4 pieces of aluminum foil, each about 12''x12'', then add 1 and 1/2 cups of shrimp and sausage vegetable mixture in the center of each foil.
