What is Salisbury Steak?

Salisbury Steak is a popular meal that originates in the United States. It’s a cross between a meatloaf and a burger patty made with seasoned ground beef.

These beef patties are first given a quick sear, then left to bask in a luscious mushroom gravy. The intriguing name? That’s a nod to a 19th-century doctor passionate about nutrition. He championed minced beef as a healthful choice.

Ingredients Needed

For this delicious Salisbury Steak, you need just a few simple ingredients that are very accessible and inexpensive:

best low carb keto salisbury steak recipes
  • Ground Beef   Go for lean ground beef. Not only is it bursting with flavor, but it’s also less greasy. A 90% lean mix hits the sweet spot.
  • Onion – White or yellow, either works wonders.
  • Almond Flour – Swap breadcrumbs for fine blanched almond flour. It offers a superb texture for your low-carb Salisbury steak.
  • Garlic – Fresh garlic? Always a win in our savory dishes. But if your kitchen’s fresh stash runs out, a dash of garlic powder will do the trick.
  • Egg – It’s the glue that holds your patties together and adds that touch of moisture.
  • Ketchup – Grab your go-to gluten-free, sugar-free ketchup and let it shine.
  • Worcestershire sauce – This concentrated delight amplifies flavors when cooking.
  • Dijon Mustard – Opt for one without added sugars.
  • Olive oil – Any oil you’ve got will do, but olive oil’s always a classic.
  • Mushrooms – I used white button mushrooms, but any other variety is a fantastic choice.
  • Unsalted Butter – It’s the magic ingredient that gifts the sauce its creamy richness.
  • Beef Broth – If you use a low-sodium beef broth, you may need to season with extra salt to taste.

How To Make Salisbury Steak

It’s so easy to make this Keto Salisbury Steak by following just a few simple steps.

Making The Salisbury Steaks

In a large bowl, add the ground beef, diced onion, your choice of almond flour (or coconut flour if that’s your jam), minced garlic, egg, ketchup, Worcestershire sauce, Dijon mustard, sea salt, and black pepper. Mix it all up like you’re spinning a DJ set – but with beef.

Now, get those hands in there and form six scrumptious patties. They should look kind of like plump burger patties.

Get your skillet hot, pour in the oil, and once it’s all warmed up, plop those steaks on. Give them about 2-3 minutes on each side. You want them golden but not fully cooked – they’ll get more time in the gravy later.

Make the Keto Mushroom Gravy

Remove the steaks from the pan, and if the pan looks too dry, add more oil.

Toss in the onion and garlic, give them a couple of minutes to soften up, then bring in the mushrooms to the party.

Add the butter, and once the butter is melted, pour the beef broth and the rest of the gravy ingredients.

Return the steaks to the gravy and cook for another 4-5 minutes until the sauce starts to thicken.

Serve hot with a side of creamy cauliflower mash and garnish with plenty of fresh parsley. Enjoy!

Tips For Making The Best Salisbury Steak

  • Achieving The Right Sauce Consistency: After pouring in your beef broth, you might notice your sauce isn’t as thick as you’d like. No worries! A pinch of xanthan gum is all you need. Start by sprinkling in 1/4 teaspoon, stirring, and then add a bit more (up to 1/2 teaspoon) until you achieve that dreamy, velvety consistency.
  • Mushroom Varieties: The world of mushrooms is your oyster—or, in this case, maybe it’s your shiitake or portobello! Whatever type you fancy, just ensure they’re sliced uniformly. This ensures even cooking and a consistent texture in every bite.
  • Mixing the Meat: Here’s where a gentle hand is crucial. Combine your meat with the other ingredients with care. Over-mixing can lead to tough steaks, and no one wants that. Think of it like a gentle handshake; firm enough to combine but gentle enough to keep the texture tender.
  • Fresh Herbs: Consider adding some freshly chopped parsley or thyme to the gravy for a burst of freshness and color.
  • Tasting is Key: Before serving, always taste your gravy and adjust the seasonings if needed. Sometimes, a little extra salt, pepper, or a splash of Worcestershire sauce can elevate the flavors to the next level.

Recipe Variations

  • Turkey Salisbury Steak: Swap out the ground beef for lean ground turkey.
  • Spicy Salisbury Steak: Add some heat to your patties with finely chopped jalapeños or a dash of cayenne pepper.
  • Make meatballs! – Use this recipe to make meatballs and then cook or freeze them.

How To Store

  • If you end up with some uncooked patties, you can freeze them and store them for a busy day when you don’t have so much time for cooking.
  • The cooked patties can be stored in the fridge in an airtight container for up to four days. Or, if you want, you can freeze them and defrost them in the refrigerator overnight.

  • 1/2 cup almond flour or 1/4 coconut flour
  • 2 garlic cloves minced
  • 1 large egg
  • 2 tbsp ketchup
  • 1 1/2 tsp Worcestershire sauce
  • 3 tsp Dijon mustard
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 2 tbsp olive oil to fry

For the Mushroom Gravy

  • 2 garlic cloves minced
  • 1/2 onion finely chopped
  • 8 oz mushrooms sliced
  • 2 tbsp unsalted butter
  • 1 1/2 cup beef broth
  • 1/2 cup water
  • 1 tsp dijon mustard
  • 2 tsp Worcestershire sauce
  • ¼ tsp sea salt
  • â…› tsp ground black pepper
  • 1/4 tsp Xanthan Gum

Instructions

  • Make Salisbury Steaks: In a large mixing bowl, combine ground beef, diced onion, almond or coconut flour, minced garlic, egg, ketchup, Worcestershire sauce, Dijon mustard, sea salt, and black pepper. Using your hands, mix the ingredients thoroughly until well combined.
  • Shape the beef mixture into 7-8 round patties.
  • Place a large skillet over medium heat and add olive oil. Cook the patties for 2-3 minutes on each side. Remove the patties from the pan and keep warm.
  • Make the Mushroom Gravy: In the same skillet, sauté the chopped onion and minced garlic until softened.
  • Add the sliced mushrooms to the skillet and continue to sauté until they're browned.
  • Reduce the heat to low and stir in the unsalted butter until melted. Gradually add beef broth, water, Dijon mustard, Worcestershire sauce, sea salt, and black pepper, whisking continuously to ensure a smooth gravy.
  • Sprinkle in the Xanthan gum, whisking vigorously to prevent lumps. The gravy will start to thicken.
  • Return the Salisbury steaks to the skillet. Let them simmer in the gravy for about 5 minutes, or until they're fully cooked through and have absorbed some of the gravy flavor.

I didn’t have any Dijon mustard, so I replaced with yellow mustard and I didn’t have Worcestershire sauce so I replaced with a lesser amount of soy sauce and it still turned out delicious. I will make it again.
