For The Roasted Cauliflower

  • Cauliflower – Use fresh, firm cauliflower head.
  • Olive Oil – Use high-quality olive oil. You can use unsalted melted butter instead.
  • Garlic Powder – You can also use onion powder.
  • Paprika – Use smoked paprika for a more intense flavor.
  • Salt&Pepper – To taste.

For The Marry Me Sauce

  • Olive Oil – Use extra virgin olive oil for sautéing the garlic. However, if needed, you can substitute it with other cooking oils like vegetable oil or canola oil.
  • Garlic Cloves – Fresh minced garlic is what makes this chicken so tasty.
  • Italian Seasoning – You can buy it from the store or make it at home using my recipe for homemade Italian seasoning.
  • Chili Flakes – Adjust the heat level with more or less chili flakes according to your taste. 
  • Vegetable Broth – Chicken broth can also be used.
  • Heavy Cream – Adds richness and creaminess to the sauce.
  • Sun-Dried Tomatoes – Use store-bought sun-dried tomatoes, chopped into small bits, for a tangy and sweet dish. 
  • Parmesan Cheese – I used freshly grated parmesan for the best flavor, but pre-shredded parmesan is great, too!

How To Make Marry Me Roasted Cauliflower 

This creamy marry me cauliflower recipe is one of my favorites since it’s super easy to make without needing cooking skills. Here is everything you have to do:

Roasting the Cauliflower

  • Rinse the cauliflower and pat dry. Remove leaves, trim the stem, and cut into even florets.
  • Toss florets with olive oil, garlic powder, paprika, salt, and pepper in a bowl.
  • Spread on a baking sheet in a single layer for even roasting.
  • Roast at 425°F for 20-25 minutes until golden and tender.

Make the Marry Me Sauce

  • Sauté minced garlic in olive oil until fragrant, about 1-2 minutes.
  • Add low-sodium chicken broth, and bring to a simmer.
  • Mix in heavy cream, seasonings, and sun-dried tomatoes; simmer for 5 minutes to thicken.
  • Stir in grated Parmesan until smooth.

Combine Cauliflower and Sauce

  • Add roasted cauliflower to the sauce, and stir to coat well.
  • Garnish with fresh parsley and serve.

For The Cauliflower

  • 1 tbsp olive oil
  • 3 garlic cloves minced
  • 1 tsp Italian Seasoning
  • ¼ tsp chilli flakes flakes
  • 1 cup low-sodium vegetable broth
  • ½ cup heavy cream
  • ½ cup sun-dried tomatoes chopped
  • â…“ cup Parmesan cheese freshly grated
  • ¼ tsp pepper or more to taste
  • 1 tbsp fresh parsley chopped to garnish

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Prepare the Cauliflower. Rinse the cauliflower head under cold water and pat it dry with a kitchen towel. Trim the leaves and cut off the stem, then cut the cauliflower into florets of similar size.
  • Season and Roast the Cauliflower. In a large mixing bowl, add the cauliflower florets with olive oil, garlic powder, paprika, salt, and pepper. Toss until the cauliflower is evenly coated with the seasonings.
  • Spread the seasoned cauliflower on a baking sheet lined with parchment paper in a single layer.
  • Roast in the preheated oven for 20-25 minutes, or until the cauliflower is tender and golden brown.
  • Make the Sauce. While the cauliflower is roasting, prepare the sauce.
  • In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant.
  • Pour in the low-sodium chicken broth and bring to a simmer.
  • Stir in the heavy cream, seasoning, and chopped sun-dried tomatoes. Let the sauce simmer for another 5 minutes, allowing the flavors to meld together.
  • Add the grated Parmesan cheese, stirring continuously until the cheese is melted and the sauce is smooth.
  • Combine Cauliflower and Sauce. Once the cauliflower is roasted, add it to the sauce and stir until well combined. Garnish the dish with freshly chopped parsley.
  • Serve the Marry Me Roasted Cauliflower hot as a delightful side dish or even a main course.
