1. Cream the softened butter and sweetener until well blended and fluffy. 

2. Add the eggs, pumpkin puree, and vanilla extract. 

3. Mix for about one minute to combine.

4. In another bowl combine the dry ingredients.

5. Pour the wet ingredients into the flour mixture and stir well to combine.

6. Using a large ice-cream scoop or a spoon divide the batter among 12 muffin cups.

7. Bake the pumpkin muffins for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
