  • Sour Cream– Most keto cheesecake recipes require sour cream or heavy cream to make the texture of the cheesecake even softer and moist while adding that specific sour tang.

Keto Cheesecake Crust

For the filling

  • 4 8oz ea. packages full-fat cream cheese room temperature
  • 2 cups powdered sweetener
  • 8 oz. sour cream room temperature
  • 4 large eggs room temperature
  • 1 tbsp pure vanilla ex tract


  • Preheat the oven to 325°F/160°C. and line the bottom of a spring pan with parchment paper.
  • Crust
  • In a large bowl, combine the almond flour, powdered sweetener, melted butter, and vanilla extract.
  • Transfer the crust mixture into a 9″ springform pan and press firmly into the bottom and halfway up the sides. Bake for 10 minutes and allow to cool for a few minutes
  • Keto Cheesecake Filling
  • In a large mixing bowl, add the cream cheese and sweetener and mix with a hand mixer until smooth and fluffy.
  • Add the eggs one by one and mix until incorporated.
  • Add the sour cream and vanilla extract.
  • Pour the cheesecake mixture over the cooled crust .
  • Bake in the preheated oven for about 50-55 minutes or until it looks set.
  • Allow to cool at room temperature for about one hour before transferring to the refrigerator. Refrigerate overnight or at least 6 hours before serving. Enjoy!
