Keto Cheesecake Crust
- 2 cups almond flour
- ¼ cup powdered sweetener
- 6 tbsp unsalted butter. melted
- 1 tsp pure vanilla extract
For the filling
- 4 8oz ea. packages full-fat cream cheese room temperature
- 2 cups powdered sweetener
- 8 oz. sour cream room temperature
- 4 large eggs room temperature
- 1 tbsp pure vanilla ex tract
Instructions
- Preheat the oven to 325°F/160°C. and line the bottom of a spring pan with parchment paper.
- Crust
- In a large bowl, combine the almond flour, powdered sweetener, melted butter, and vanilla extract.
- Transfer the crust mixture into a 9″ springform pan and press firmly into the bottom and halfway up the sides. Bake for 10 minutes and allow to cool for a few minutes
- Keto Cheesecake Filling
- In a large mixing bowl, add the cream cheese and sweetener and mix with a hand mixer until smooth and fluffy.
- Add the eggs one by one and mix until incorporated.
- Add the sour cream and vanilla extract.
- Pour the cheesecake mixture over the cooled crust .
- Bake in the preheated oven for about 50-55 minutes or until it looks set.
- Allow to cool at room temperature for about one hour before transferring to the refrigerator. Refrigerate overnight or at least 6 hours before serving. Enjoy!
