- 8 large eggs room temperature
- ¾ cup coconut flour
- 8 oz cream cheese softened or coconut cream
- 4 tbsp unsalted Butter melted
- 1 tsp baking powder aluminium-free
- ½ tsp salt
Instructions
- Preheat the oven to 350°F/ 180°C. Line a small 9 x 5-inch loaf pan with parchment paper and grease the sides.
- In a large bowl, crack the eggs, add the melted butter, cream cheese, and a pinch of salt. Mix on medium speed for about 2 minutes until frothy.
- Add the coconut flour and baking powder and continue mixing until a smooth batter forms. Let it rest for about 5 minutes for the batter to slightly thicken.
- Transfer the batter into the lined loaf pan and use a rubber spatula to smooth the top.
