Keto Cranberry Bread with Sugar-Free Glaze

I’m a huge fan of keto loaf desserts, and I’m sure you’ve already tried my popular keto blueberry bread, double chocolate pound cake, keto banana bread, or this keto pumpkin bread that’s perfect for fall.

Ingredients in Keto Cranberry Orange Bread 

This keto cranberry cake needs only a few ingredients: 

  • Eggs – When baking, always use room temperature eggs as it greatly reduces the eggy taste.
  • Grain-Free Flour: I love to use a mix of both blanched almond flour and coconut flour for the best texture. 
  • Cranberries – I usually use them fresh when in season, through November and December, and frozen the rest of the year.
  • Orange zest – Make sure you zest only the orange part and not the white part, which can be super bitter. 
  • Orange extract – since this is a keto recipe, I use a high-quality orange extract to replicate the orange taste without adding any extra carbs.
  • Butter – I love the buttery flavor, but if you’re looking for a paleo or dairy-free keto cranberry bread, use coconut oil instead. 
  • Sweetener – use your favorite sweetener. My favorite lately is this Monk Fruit Sweetener that’s perfect for baking and has zero after taste.
  • Nuts – such as pecan, walnuts, or almonds. I love some extra crunch in this keto sweet bread. 

How to make Keto Cranberry Orange Bread?

It’s super easy to make this keto low carb cranberry bread if you follow a few steps:

  1. Gather all the ingredients, a few bowls, and plug in your electric mixer.
  2. Meanwhile, preheat your oven to 350°F /180°C and grease a 9×5 inch loaf or line with parchment paper.
  3. Crack the eggs into a large bowl, add the sweetener, heavy cream, orange extract, orange zest, and mix using an electric mixer for about 2 minutes.
  4. After the egg mixture looks frothy, add in the almond flour, coconut flour, baking powder, and softened butter. Mix until all the ingredients are well incorporated, and the batter is slightly thick. 
  5. Use a spatula to fold in the cranberries and transfer the batter to the prepared pan. 
  6. Bake for 45-50 minutes until the bread looks done, and a skewer inserted in the middle comes out clean.

Are Cranberries Keto?

Yes, you can definitely enjoy cranberries on a keto diet. The amount needed in this recipe is about 1 cup that, and according to the USDA website, it contains only 8g net carbs. That’s higher than other berries( e.g. strawberry), but when in season I love to enjoy them. 

On the other side, dried cranberries are not keto since they are coated in tons of sugar.

Sugar-Free Keto Orange Glaze

Instructions
 

  • Preheat your oven to 350°F /180°C and grease a 9×5 inch loaf or line with parchment paper. Set aside.
  • In a large mixing bowl, add the eggs, sweetener, heavy cream, orange extract, orange zest. Use an electric mixer to mix for 2 minutes.
  • Add the almond flour, coconut flour, baking powder, softened butter, and mix until a thick batter forms.
  • Fold in the cranberries and then transfer the batter to the prepared loaf pan.
  • Bake for 45-50 minutes until the bread looks done, and a skewer inserted in the middle comes out clean.
  • Allow the keto orange loaf to cool down completely before adding the glaze.
  • To make the glaze: Add all the ingredients to a medium mixing bowl. Use a round whisk to combine all the ingredients. When the sugar is fully incorporated, top the bread with the icing and enjoy.
