If you have a bag of coconut flour sitting in your pantry and aren’t quite sure what to make with it, I’ve got plenty of ideas for you! I’ve gathered over 30 coconut flour recipes, from fluffy pancakes and muffins to homemade bread, cookies, brownies, and even a few savory favorites.
I love baking with coconut flour, especially when I want to make something without almond flour. But if you’ve ever tried swapping it for regular flour, you probably know it can be a little tricky! Coconut flour absorbs so much more liquid, and using even a little too much can turn a perfectly good recipe dry.
That’s why I’ve included some of my favorite coconut flour baking tips before the recipes. Whether you’re new to low-carb baking or you’ve been using coconut flour for years, I hope you’ll find something here you want to try next!
What is Coconut Flour?
Coconut flour is my favorite low-carb flour for baking delicious keto goodies. This keto-friendly flour is made from the leftover coconut meat after coconut milk production. It is then dried at a low temperature and ground. The fine texture of coconut flour resembles that of wheat flour, but it has different properties.

Highly Absorbent: Coconut flour is extremely absorbent due to its high fiber content. It can absorb a lot of liquid, which means you usually need less coconut flour than you would other flours. Although batter made with coconut flour may initially appear thin, it begins to thicken if allowed to rest for a few minutes.
Gluten-Free and Nut-Free: While both flours are gluten-free, coconut flour is also nut-free, making it suitable for people with nut allergies.
Rich in Fiber: It is very high in dietary fiber, which can be beneficial for digestion.
Requires More Eggs: Due to its absorbency, recipes with coconut flour often require more eggs to provide moisture and help bind the ingredients together.
Coconut Flour vs. Almond Flour
Although both are popular in low-carb baking, coconut flour and almond flour behave very differently.
Almond flour is made from finely ground almonds and contains more fat, which helps baked goods stay moist and tender.
Coconut flour is much more absorbent because it’s high in fiber. You usually need a smaller amount, along with enough eggs or other liquids to keep the batter from drying out.
Can you substitute one for the other? Not directly! You may have seen suggestions to use ¼ cup of coconut flour for every cup of almond flour, but there’s no conversion that works for every recipe. You’ll usually need to adjust the eggs, liquids, and sometimes the other ingredients, too.
I always recommend following a recipe specifically developed for coconut flour rather than trying to swap it into a regular almond flour recipe.
What’s the Best Coconut Flour for Baking?
I recommend using a finely ground, unsweetened coconut flour. Most brands work well, but some absorb more moisture than others, so the batter may behave a little differently depending on the one you use.
One thing I’ve learned from baking with coconut flour is to give the batter a few minutes to rest when the recipe calls for it. Coconut flour continues absorbing moisture after mixing, so a batter that looks thin at first can become much thicker.
And don’t pack the flour into your measuring cup! I prefer weighing it whenever the recipe provides grams, because a little extra coconut flour can make a big difference in the finished texture.
Is Coconut Flour the Same as Shredded Coconut?
No, and this is an important difference!
Coconut flour is made from dried coconut meat that has had much of its fat removed, then ground into a fine flour. It absorbs a lot of moisture, which is why recipes using it often need extra eggs or liquid.
Shredded coconut is made from thin pieces of coconut meat and contains more fat. It adds texture and coconut flavor, but it doesn’t absorb liquid or behave like coconut flour.
I wouldn’t use shredded coconut or desiccated coconut as a substitute for coconut flour in baking. They’re not interchangeable.
