Regular brownies are not keto-friendly because they are made with wheat flour, sugar, and other high carbs ingredients.

For The Brownies Base

  • Almond Flour – use superfine blanched almond flour to obtain the best texture for these brownies.
  • Eggs – always use large room-temperature eggs to avoid that eggy smell and taste.
  • Butter – you will need room-temperature unsalted butter to ensure good mixing.
  • Cocoa Powder – use a high-quality cocoa powder and ensure it has no added sugar.
  • Dark Chocolate – use unsweetened dark chocolate. It will give that chocolate taste.
  • Sweetener – use powdered sweetener to ensure good mixing.
  • Baking Powder – help the brownies rinse and become super fluffy.

For The Pumpkin Layer

  • Pumpkin Puree – you can make it at home or buy it from the store. Just make sure that you read the label before buying it.
  • Cream Cheese – use room temperature cream cheese to ensure good mixing and to avoid creating any lumps.

These keto brownies are so easy to make that I choose to prepare them anytime I have a sweet craving or some unexpected guests. So here is everything you have to do:

  2. Now, you can add the rest of the ingredients and mix until a smooth batter is formed.
  3. Pour the brownie base into a prepared pan and set aside.
  4. Make the pumpkin layer. Add all the ingredients for the pumpkin layer into a mixing bowl and mix them until well combined and smooth.
  5. Add dollops of the pumpkin mixture over the brownie base and, using a skewer, swirl all over.
  6. Bake the pumpkin brownies in the preheated oven for 30-35 minutes or until the top looks set.

Frequently Asked Questions

How To Know When My Brownies Are Ready?

Insert a skewer into the center of the brownies to see if they are done. If the skewer is clean, they are done. If not, return them to the oven to continue cooking for two minutes, then check one more.

Is Pumpkin Keto-Friendly?

Sure, pumpkin is a great ingredient for someone following a keto diet, not only because it has fewer carbs than other fruits and vegetables and can be used to create many delicious recipes.

Can I Replace Almond Flour With Coconut Flour?

No, because coconut flour absorbs liquid extremely quickly compared to almond flour. So, if you use coconut flour instead of almond flour, you will end up with some dry brownies.
