- 1 batch keto pie crust
- 1 cup unsalted butter melted
- 1 cup golden monk fruit sweetener
- 1 cup coconut milk full-fat canned
- 2 cups pecans chopped
- 3 large eggs
- ½ tsp salt
- 2 tsp vanilla extract
- ½ cup pecans
Instructions
- Combine together the melted butter, coconut cream, sweetener, vanilla extract, and salt.
- Stir in the eggs and chopped pecans.
- Pour the filling into the baked crust. Arrange pecan halves on top.
- Cover the crust edges with aluminum foil to prevent burning.
- Bake for 40-45 minutes or until the center is nearly set. Allow to cool to room temperature, then serve.
